Cauliflower Grilled Cheese 'Sandwich'

1 cauliflower head (about 4 cups processed cauliflower)
2 eggs, beaten
1/2 teaspoon oregano
70g shredded Mozzarella DIRECTIONS
Chop cauliflower into florets.
Add cauliflower florets into a food processor and blend until it resembles rice. If you do not have a food processor, grate the cauliflower florets.
Mix the processed cauliflower, eggs, and oregano in a medium bowl. Sprinkle salt and pepper over the mixture.
Place a large non-stick skillet over medium heat and spray with cooking spray.
Take a scoop of the cauliflower mixture and form it into a small patty and place on one side of the pan.
Repeat to form a second patty on the other side.
These patties will be used as the bread for the sandwich.
Use a spatula to press down on both pieces. Cook for about 5 minutes, or until golden underneath.
Flip the patties and cook for another 3 minutes, or until the other sides are golden.
Add cheese on top of one cauliflower patty and then top with the other cauliflower patty.
Cook until the cheese is melted, about 2 minutes more per side.
Repeat with the remaining ingredients to make more sandwiches.
