Green Goddess & Apple Meatza - P2 Recipe

  • Ground Chicken (Choose portion as per meal option)

  • 1/2 Teaspoon freshly chopped chives

  • 1/4 teaspoon dried tarragon

  • Mixed Greens

  • Favorite type of sprouts

  • 1/2 Apple - Thinly sliced

  • 1/2 Lemon sliced

Basil Pesto

  • 125ml basil leaves

  • 125ml flat-leaf parsley leaves

  • Juice of 1 lemon

  • 1 Tablespoon Water

  • 1/4 Teaspoon Garlic Powder

  • 1/4 Teaspoon Onion Powder

  • 1/8 Teaspoon Salt


  1. Add basil leaves, parsley leaves, lemon juice, 1 Tbsp water, garlic powder, onion powder & salt to a food processor or blender. Pulse until combined. If the mixture is too thick, add water - 1tsp at a time until the desired pesto consistency. Set aside.

  2. Heat a grill or grill pan over medium-high heat. Once hot, add lemon slices. Grill on both sides for approximately 1 - 2 minutes per side. Remove from heat & set aside.

  3. Preheat oven to 220º. Line a rimmed baking sheet with parchment paper.

  4. In a medium bowl, combine ground chicken, chives & tarragon. Using your hands, mix together until well combined.

  5. Add the chicken mixture to the baking sheet and flatten it into a round, thin circle. Wrap a wooden rolling pin with parchment paper and gently roll out the meat. Try not to tear the meat.

  6. Bake the crust for 10 min.

  7. Remove the baking sheet from the oven. Use a paper towel to soak up the juices before flipping the crust.

  8. Reduce temperature to 180º. Bake an additional 10 min.

  9. Remove from oven. Top pizza with pesto.

  10. Add a layer of mixed greens on top, then a layer of sliced apple, followed by grilled lemon slices & sprouts.

  11. Serve Immediately
